红烧三文鱼头Braised Salmon Fish Head
Ingredients :
1 no Salmon Fish head (Garoupa, Red Snapper or Threadfin)
1 pc Ginger, peeled and sliced
3 cloves Garlic, peeled and sliced
1 no Big Onion, peeled and cut wedges
2 stalks Spring onion (scallion), cut into 2.5-cm lengths
5 pcs Dry Chili, soak in hot water and cut into 2.5-cm lengths
1 tbsp Chinese Rice Wine
1 tbsp Grapeseed Oil
Seasoning:
1 tbsp Ginger Juice
1/2 tsp Soy Sauce
Sauce:
1 cup Fresh Chicken Stock
3 tbsp Light Soy Sauce
1 tsp Dark Soy Sauce
1 tbsp Apple Cider Vinegar
1 tsp Sesame Oil
1/2 tbsp Sugar
1 tsp Ground White Pepper
Method :
1) Clean Salmon fish head and halve.
2) Season with ginger juice and light soy sauce for 30 minutes.
3) Heat a clean wok with 1 tbsp grapeseed oil and lightly brown dry chili, ginger, 1/2 of spring onion, garlic and big onion until fragrant.
4) Put in marinated salmon fish head to stir-fry for 1 minute, then sprinkle in wine.
5) Pour in sauce mixture and bring to boil.
6) Cover wok and simmer for 5 minutes.
7) Thicken sauce in wok with cornflour mixture.
8) Stir in remaining spring onion.
9) Dish out the fish head on a serving dish and serve in hot.
