Ingredients:
4 large Russet Potatoes
1 stick Butter
1 cup Grated Cheddar Cheese
1/2 cup Cooked Ham, Cut in small cubed
3/4 cup Milk, plus more if needed
2 tbsp Chopped Scallions, optional
Salt and pepper, to taste
Method:
1) Preheat oven to 200 C.
2) Wash potatoes and poke 2 or 3 vent holes in each with a fork.
3) Bake potatoes in oven until done, about 1 hour.
4) Remove potatoes from oven when its cooked and fork goes in easily.
5) Allow to cool for 10 minutes.
6) Slice potatoes in 1/2 lengthwise.
7) Scoop out potato, and mashed it, than mix with cooked ham, butter, cheese, milk, scallions, salt and pepper.
8) Spoon mashed potatoes back into skins and sprinkle some cheese on top.
9) Place in a baking dish, return to oven and bake at 375° for 15-20 minutes.
