当归枸杞蒸鸡Steamed Chicken Angelica & Lycium





1/2 no Kampung Chicken
Lycium 枸杞
Angelica当归
Salt
Chicken Stock - Optional
Chinese Rice Wine

Marinade for at least 2 hours, then steam for 1/2 hour.
Serve with white rice.

炒双飞 Stir-Fried Chicken Liver with Pickled Cucumber






Cucumber - Wash & cut in slices. Rub with salt till the cucumber soften then rinse with water and pad dry.  Pickled with apple cider vinegar & sugar for 24 hours.

Chicken Liver - Wash & cut into pieces & marinade with soy sauce, pepper, sesame oil & Chinese rice wine for 1/2 hour.

Sliced Ginger
Scallion cut in 1" long
Sliced Garlic
Red Chilli
Saute ginger & garlic with oil til fragrant then add in chicken liver to cook till tender and fully cook.
Then add in pickled cucumber, scallion & red chilli.

Pasta In Carbonara sauce















INGREDIENTS:
3      pkt.                 Pasta
2      no                   Big Onion
5      cloves            Garlic
4      pcs                 Bay Leaves
2      tbsp               Olive oil
2      can                 Mushroom Sauce
2      can                 Button Mushroom
1/4  lit.                    Chicken Broth or water
1      lt.                     Low-fat milk
1     can                  Ideal Milk

To taste :Kosher salt, Freshly ground black pepper (Chicken Stock Powder - Optional)

1)   Bring a large pot of salted water to a boil over medium-high heat. Add the pasta and cook according to package directions (6 to 7 minutes).

2)   Meanwhile, mince the onion and garlic; finely chop the button mushroom.

3)    Heat the oil in a large saucepan over medium heat.  Add the shallot, garlic, bay leaves & black pepper; cook for 3 minutes or till the fragrant come out.  Then put in button mushroom.   Add in mushroom sauce & well mixed.   Pour in chicken broth, milk and ideal milk.  Reduce the heat to medium-low & keep stirring frequently, until the sauce is slightly thickened.  Season with salt and pepper to taste; keep warm on the lowest setting. 

4)   Drain the pasta and add to the sauce & served it.

Cabbage Borscht Soup






Streaky Bacon(sausages)       - cut in pieces
Cabbage                                   - washed and cut in pieces
Carrot                                       - washed, peeled skin and cut in cube
Celery                                       - washed and cut in pieces
Tomatoes                                  - washed and cut in cube
Potatoes                                    - Peeled skin, washed and cut in cube
Beet Root (Optional)               - Peeled skin, washed and cut in cube
Minced Garlic
Chopped Yellow Onion
Bay Leaves
Black Pepper Powder
Tomato Puree
Heavy Cream (Ideal Milk or Fresh Milk)
Chicken Stock (Beef Stock)
Salt
Oil

Heat oil stir-fry the streaky bacon, then add in minced garlic, chopped yellow onion, bay leaves and black pepper powder to saute till fragrant.

Add in cabbage, carrot, celery, tomatoes and potatoes to stir-fry.

Pour in tomato puree, chicken stock and heavy cream and bring to boil.

Slow down to medium flame to cook all the vegetables till soft.  

Add in salt to taste.

Avocado And Cucumber Salad


6 nos. Japanese Cucumber
3 nos. Avocado
1 stalk Chopped Scallion
2 tbsp Lemon Juice
Japanese Mayonnaise with Vegetables

Wash and peel the Japanese cucumber.

Cut Japanese cucumber and avocado in cube.

Then mix all the above ingredients and chill in the refrigerator before serve.
