糖醋鱼Sweet & Sour Fish













Ingredients: 
For the fish: 
600 gm           Halibut (Any firm white fish will work)
2 tbsp             Cornstarch mixed with 2 tsp salt and 1/2 tsp white pepper
Oil For Deep Frying 

For the sauce: 
1/2 no             Big onion (Large diced) 
   2 nos           Tomatoes (Large diced) 
   2 stalks        Scallion (Cut in 1" long)
   1 tbsp          Plum Sauce
   3 tbsp          Tomato Ketchup 
   2 tbsp          Sugar 
   1 tbsp         Vinegar

Method:

1)  Pat fish dry and coat them with the seasoned cornstarch. 
2)  Heat oil over medium heat. 
3)  When oil is shimmering, add fish and deep-fry till golden brown on both sides.
4)  Transfer to a plate while you prepare the sauce.
5)  In a clean sauce pan, add in big onion, tomatoes, scallion, plum sauce, tomato ketchup, sugar & vinegar.
6)  Bring to boil the sauce.
7)  Pour the sauce over the deep-fried fish.
8)  Served in hot.
