泰式青加里鱼头 Thai Green Curry Fish Head












Ingredients:
     1 no             Grouper Fish Head - Wash, cut in peices
2 - 3 tbsp          Instant Green Curry Paste
    2 tbsp           Grapeseed Oil
    2 no              Brinjal - Wash cut in 2" long
 250 g               Petai
     1 bundler     Basil leaves
     5 pc            Lime Leaves
 200 ml            Coconut Milk
 200 ml            Water
    3 tbsp          Plum Sugar
                        Fish Sauce

Method:

1)  Heat oil pan-fry the brinjal, set aside.
2)  Heat oil add in green curry paste to saute.
3)  Add in fish head to stir-fry for a minute.
4)  Put in coconut milk & water bring to boil.
5)  Add in cooked brinjal, petai, basil leaves & lime leaves.
6)  Taste it with fish sauce & plum sugar.
7)  Garnish with red chili & cili padi.
