黄加里鸡 Ayam Masak Lemak Cili Api

Ingredients:
    2 no           Whole Drumstick - wash, pat dry & cut in pieces
200 ml           Coconut milk
   2 glass       Water
   5 no            Chili Api
   1 pkt           Instant Masak Lemak Cili Api Paste

Method:
1)  Combined chicken and Instant Masak Lemak Cili Api Paste. 
2)  Marinade for 1/2 hour.
3)  Heat the cooking oil in a pot or wok to saute the chicken until fragrant.
4)  Add in water & coconut milk bring to boil.
5)  Put chili api continue to cook in medium low frame or till the chicken cooked.

烧烤土豆BBQ Potatoes




Ingredients:
   2 tbsp               Butter, melted
1/2 tbsp               Sweet Paprika Powder
1/2 tbsp               Cayenne Powder
1/4 tsp                 Black Pepper Powder
   2 tbsp               Honey
1/2 tbsp               Minced Garlic

500 g                Potatoes, peeled and quartered

Method::
1. Preheat oven 200°C.

2. In large bowl, combine, butter, sweet paprika powder, cayenne powder, honey and minced garlic.

3. Add potatoes; toss to coat.

4. Spoon potatoes in a greased baking dish.

5. Bake 40-50 minutes until potatoes are tender.

豆豉蒸猪肉条Steamed Sliced Pork in Fermented Bean




Ingredients:
Sliced Pork
Soy Sauce
Sugar                          
Pepper
Corn Flour
Sesame Oil
Chinese Wine
Plum Sauce
Minced Garlic
Minced Ginger
Chopped Fermented Bean
Minced Eye Chili

1)         Marinade all the ingredients with the sliced pork.

2)         Steam it for 20 minutes.

空炸白豆腐 Air Fry White Bean Curd




Method:
1)  Rinse & pat dry the white bean curd.
2)  Cut into 4 pieces each & use a small knife deep cut the center of bean curd.
3)  Sprinkle some flour & spray some cooking onto the bean curd.
4)  Place into a preheat air fryer at 200 C.
5)  Air fryer for 15 to 20 mins.
6)  If want a crispy skin, must air fry longer time.

鳄梨,黄瓜和丹麦奶酪沙拉Avocado, Cucumber and Danish Cheese Salad


Ingredients:
3 no           Avocados, diced medium
2 no           Japanese Cucumber, peeled and diced medium
1/4 pkt       Baby Carrot, sliced thin
1/2 no        Medium Onion, diced small
4 tbsp        Fresh Cilantro, chopped

1 cup         Danish Cheese, diced medium
Sauce:
1/2 no        Lemon Juice
1/4 cup      Extra Virgin Olive Oil

1 tbsp        Dijon Mustard
2 tbsp       Mayonnaise
salt
Fresh Black Pepper

Method:
1)  Toss all ingredients with the sauce mixture in a bowl.

2)  Keep in refrigerator for at least 2 hours before serve.

苹果派 Apple Pie







Ingredients:
2 tbsp          Flour
3 no             Apples, peeled, cored and sliced 1/4-inch thick 
1/3 cup        Raisins
1 tbsp            Sugar
1 tsp              Ground Cinnamon
1/4 cup         Chopped Nuts
1/3 no           Lemon Juice
1 pkt             Frozen Puff Pastry (10 pcs)
For Garnish:
Confectioners' Sugar
Serve with Vanilla Ice Cream
Method:
  1)  Preheat the oven to 200 degrees C. Line a baking sheet with parchment paper.
  2)  Core and slice apple 1/4-inch thick.
  3)  Well mix apple, flour, sugar, cinnamon, lemon juice, raisin & nuts.  Set aside.
  4)  Lay out 1 piece of puff pastry on a clean, flat, lightly floured surface.
  5)   Spread the apple filling evenly onto the puff pasty surface, top cover with a piece of puff pastry & leaving a 1/2-inch clean edge on all sides.
  6)  Use a small fork to seal the edges at each end and brush with some egg brush.
  7)  Carefully place the puff pastry on the prepared baking sheet.
  8)  Bake the puff pastry until golden brown, 30 to 40 minutes.
  9)  Remove from the oven and cool for 15 minutes.
10)  Sprinkle with confectioners' sugar just before serving.
11)  Serve plain or with ice cream.

空炸混合香料鸡腿 Air Fry Chicken Drums In Mixed Spices





Method:
1) Rinse & pat dry the chicken.
2) Marinade the chicken with salt, pepper & mixed spices.
3) Spray some cooking onto the chicken not more than 1 tbsp.
4) Place into a preheat air fryer at 180 C.
5) Air fryer for 20 mins.

烤香草鸡腿Roasted Chicken Thigh With Herbs






Ingredients:
1 no. (about 1.6kg) chicken or 4 nos. whole drumsticks
Salt
Crushed Black Pepper
Sweet Paprika
Cayenne Pepper
 Cajun Powder

Method:
1)  Rinse the chicken then rub over the skin and inside with the above ingredients.  Marinate for 1 hour or more.
2)  Greased roasting pan and place on the marinated chicken (breast side down).  Roast in the preheated oven at 210 oC for 30 to 40 minutes, or until cooked through.  
3)  Remove, leave to cool and cut into pieces, arrange on a serving platter, leave aside.
4)  Serve with salad.

火腿和土豆浓汤Ham & Potatoes Chowder

 

Ingredients:
 1 kg                          Wash Potatoes, peeled and diced
 1 no                          Onion, diced
 1 pc                          Carrot, diced
 1 rib                          Celery or Broccoli, diced
 250 g                        Smoked Ham, diced
 3 cloves                     Minced Garlic
 3 tbsp                        Butter
1/4 cup                      All Purpose Flour
 6 cups                       Chicken or Vegetable Broth
  1/2 cup                    Heavy Cream
 Salt and Pepper to taste
 Cayenne Pepper (optional)
For Garnishing:
Shredded Cheddar Cheese
Chopped Fresh Chives (optional)
Method:
1)  Melt butter in a stockpot over medium heat until golden brown.
2)  Stir in carrot, celery or broccoli, onion, ham, and garlic; cook and stir for 5-6 minutes, until the vegetables soften and the onions are translucent.
3)  Stir in flour; cook for about 3 minutes.
4)  Stir in chicken broth, 1 cup at a time.
5)  Turn the heat to high and bring to boil and simmer on medium-low for 15 minutes, stirring occasionally.
6)  Taste the soup for salt and add more if necessary.
7)  Stir in potatoes; cook for 15 minutes, until potatoes are tender.
8)  Season with salt and pepper to taste, add cayenne if desired, and add cream.
9)  Stir to combine and heat through. Garnish with fresh chives & shredded cheddar cheese.
