Yam Cake 蒸芋头糕











Ingredients:
1.2 kg       Taro - Cut Cube
500 g        Rice Flour
 45 g        Tapioca Flour
 25 g        Tang Mein Flour
800 ml       Water
Seasoning :
  2 tsp      Salt
  1 tsp      Chicken Stock Powder
  1 tsp      White Pepper Powder
1/2 tsp      Five Spice Powder

100 g        Dried Shrimps - Soak & Chopped
200 g        Small Red Onion - Sliced
100 g        Dried Mushroom - Cut Cube
  4 pcs      Chinese Sausage - Remove Skin & Cut Cube
Sesame Seed
Oil

蒸豆鼓排骨



豉酱蒸凤爪



材料:
鸡脚 28支,青葱 1根,姜片 3片,八角 2粒
调味料:
蚝油 4Tbsp
泰式甜辣椒酱 2Tbsp
叉烧酱 2Tbsp
白砂糖 1+1/3Tbsp
蒜末 1tbsp
辣椒 1根(切末)
玉米粉 1Tbsp
料酒 1Tbsp
红糟 1/2Tbsp
香油 1tsp
豆豉 1Tbsp(市售豆豉也分干和湿的,湿的会比较香)~ 我有用汤匙稍微压烂

鸡脚洗净剁去指甲,取一锅,将鸡脚冷水下锅煮至滚后,捞起洗净后充分擦干水份,备用。
热油锅,将(1)的鸡脚入锅中,炸至表面呈金黄,即可捞起,备用。
再取另一锅水,煮滚后放入炸鸡脚,加入青葱,姜片和八角,用小火煮1小时分钟,捞起,把鸡脚剁成两段,备用。
将所有调味料调均,再倒入盆中和鸡脚充分搅拌均匀,再盛入盘中,放入锅中,以大火蒸约30分钟,即可!

Tom Kha Soup



Ingredients:
  1 liter        Broth
50 g            Tom Kha Paste
  2 tbsp       Chili Oil
  5 no          Small Red Onion
  5 no          Birds Eye Chili
  8 pc          Lime Leaves
  2 pc          Lemon Grass
  5 slices     Galangal
  1 stalk       Parsley
  2 pc          Chicken Thigh - Boneless
 15 pc         Prawn
   2 no        Tomatoes
1/2 no        Cabbage or Cauliflower
1/3 no        Carrot
200 g         Mushroom
250 ml        Coconut Milk
   2 no         Lime Juice
   1 tbsp      Sugar
   1 tsp        Salt
For Garnishing:
Chopped Parsley & Chopped Spring Onion

2 cups        Hot Broth
3 no           Japanese Cucumber
1 pkt          Cherry Tomatoes
1 pkt          Apple Mints
1 pkt          Parsley
1/2 no        Lemon Juice
1 no           Lemon Rind
Extra Virgin Olive Oil

Homemade Walnuts Milk

    1   cup (125 g)      Walnuts - Soak for overnight then rinse it
    4 cups (1 liter)      Water
1/8 tsp                       Salt
   2 tbsp                     Honey
   1 tsp                       Pure Vanilla Paste
