黄咖喱鲭鱼 Mackerel In Yellow Curry






Ingredients:
500 g Mackerel
1 no Coconut milk
1 glass Water
2 no Tomato (Each tomato cut in 4 pieces)
5 no Chili Api
Few Pieces Assam Keping
Salt & Sugar to Taste

Paste:
1 big no. Garlic
1 bowl Shallots
3 pcs Lemon Grass
1/3 inch Ginger
1/3 inch Galangal
1/3 cup dried shrimp - soaked in hot boiled water, washed and drained
1/2 teaspoon turmeric powder

Method:
1)  Combined all the paste ingredients into a food processor and blend until smooth/paste.
2)  Heat the cooking oil in a pot or wok.
3)  Saute the spice paste until fragrant.
4)  Add in water & coconut milk bring to boil.
5)  Put chili api, assam keping, tomatoes & fish to continue cook in medium low frame.
6)  Once fish cook add in salt & sugar to taste.

鸡蛋煮参巴辣椒酱 Hard Boiled Egg With Sambal Tumis








Ingredients:

Homemade Sambal Tumis (Chili paste)

Hard Boiled Egg

Shredded Big Onion


Homemade Sambal Tumis (Spice paste)

Inghrdients:
6 nos         Shallots
2 cloves    Garlic
1/3 inch     Ginger
 1/3 inch    Galangal
2 serving spoons sambal olek-I use Vegetarian Sambal
1 teaspoon Belacan (dried shrimp paste) - Optional
1/2 cup dried shrimps (optional) - soaked and drained (I Changed to Anchovy)
1/2 cup cooking oil
Salt to taste
1/2 teaspoon sugar
1 tbsp Seedless Tamarind mix with water
1 onion - cut to onion ring shaped
Method:
Combined all the ingredients from the spice paste into a food processor and blend until smooth/paste.
(Except the cuts onion ring,tamarind mixture, salt and sugar)
Heat the cooking oil in a pot or wok.
Saute the spice paste until fragrant.
Add in the cuts onion ring,tamarind mixture, salt and sugar and cooked until crispy and the oil surfaced.

烤肉和碎芝士饭 Baked Bolognaise Cheese Rice





Ingredients:

      3 cups        Cooked Rice
1 1/2 cups        Shredded two-cheese blend
                         (Cheddar cheese and Mozzarella Cheese)
      3 cups        Homemade Italian Bolognese Sauce (Refer to Pasta dated 22, May 2013)


1)  Place cooked rice in a bowl.
2)  Sprinkle some cheese on top of the cooked rice.
3)  Pour in Italian Bolognese Sauce.
4)  Sprinkle some cheese again on top of the  Italian Bolognese Sauce.
5)  Bake at 400°F. for 20 minutes or until the mixture is hot and bubbling.

瑞士奶酪糖霜胡萝卜蛋糕 Homemade Swiss Carrot Cake With Cream Cheese Frosting










Ingredients:

    2 cup     Sifted All Purpose Flour
    2 tsp     Baking Powder
1 1/2 tsp     Baking Soda
    1 tsp     Salt
    2 tsp     Cinnamon Powder
1 1/2 cup     Vegetable Oil
1 1/2 cups    Sugar
    4 nos     Egg
    2 cups    Grated Carrot
    1 sm can  Crush Pineapple, undrained
1 1/2 cup     Chopped Walnuts or Pecans
    1 cup     Raisins
    1 tsp     Vanilla Extract

Method :

1) Sift, baking powder, baking soda, salt & cinnamon powder together.
2) Combine oil & sugar in a big mixing bowl, beat thoroughly with a electric mixer.
3) Add egg, one at a time; beat well ater each addition.
4)  Sift flour mixer into the egg mixture, beat thoroughly.
5)  Add in remaining ingredients.
6)  Pour batter into a 9" X 13" pan or two 9" X 5" in pan or three 8" X 4" pan.
7)  Bake at 350 Degrees for 1 hour or until cake test done. (I use 250  Degrees for 1 hour & 20 minutes)

Frosting:

Mix together 3 oz soft cream cheese, 2 tbsp butter, 1/2 tsp vanilla extract & 1 3/4 cup confectioners' sugar.

黑胡椒烤鸡腿 Roasted Chicken Drumstick With Black Pepper Sauce








Ingredients

1 no. (about 1.6kg) chicken or 4 nos. whole drumsticks

Marinade

2 tbsp “Shaoxing” wine, ½ tbsp salt
1 tbsp crushed black pepper, 1 tbsp light soy sauce

Black Pepper Sauce (mix well)

1 tbsp light soy sauce, 2 tbsp oyster sauce
1 tsp sugar, 1 bowl (250ml) chicken broth
1 tsp monosodium glutamate, 1 tbsp crushed blacked pepper
½ tbsp dark soy sauce

Method

Rinse the chicken then rub well with the marinade over the skin and inside.  Marinate for 1 hour or more.

Greased roasting pan and place on the marinated chicken (breast side down).  Roast in the preheated oven at 250 oC for 15 minutes, then turn over the chicken, continue roast for further 15-20 minutes until cooked through.  Remove, leave to cool and cut into pieces, arrange on a serving platter, leave aside.

Mix well the Black Pepper Sauce and bring to a boil, thicken with some cornstarch solutions (about 1 tbsp).  Remove pour over to the chicken pieces.  Serve hot.

肉碎日本豆腐 Braised Japanese Bean Curd With Minced Meat











Ingredients:
    3 nos        Japanese Bean Curd - cut in big pieces
100 g            Minced Meat - marinade with soy sauce, pepper, sesame oil & corn flour
    1 tbsp       Chopped Garlic
    2 nos        Egg
    2 tbsp       Corn flour
    2 stalks     Scallion - cut in 1" long
 1/2 bowl      Water
                     Oil
To Taste:
Soy Sauce
Pepper
To Thicken The Sauce:
Corn Flour
Water

Method:
  1)  Heat oil, add in egg, pan-fry it.  Set aside.
  2)  Coat Japanese bean curd with 2 tbsp of corn flour.
  3)  Heat oil in a pan, pan-fry Japanese bean curd till
        both side golden brown.  set aside.
  4)  Heat oil sautee the chopped garlic, add in marinated
        minced meat continue cook.
  5)  Put in 1/2 bowl of water bring to boil, then add in fried
        Japanese bean curd.
  6)  Add in soy sauce and pepper to taste, continue to braise
        the minced meat &  Japanese bean curd.
  7)  Thicken the gravy with cornflour & water mixture.
  8)  Add in scallion to garnish.
  9)  Dish out & pour on top of the fried egg.
10)  Serve it.
