Vegetarian Chap Chye


红烧扣肉











Ingredients:
    1.4 kg            Pork
     15 slices       Ginger
       3 stalks       Spring Onion
       4 pcs           Bay Leaves
       2 tbsp         Szechuan Peppercorn
       4 pcs          Anise Star
   1/2 cup           Light Soy Sauce
1 1/2 cup           Shao Xin Wine
      1 tbsp          Dark Soy Sauce
      1 tbsp          Grapeseed Oil
    1.5 liter         Water

1)  Boil pork with water, ginger, spring onion and Shao Xin Wine for 1/2 hour.
2)  Apply dark soy sauce and oil onto the pork, air fry for 10 minutes at 200 C.
3)  Cut pork into thick slices, marinade with light soy sauce, dark soy sauce and Shao Xin Wine for 1/2 hour.
4)  Arrange pork slice into the bowl with skin side down, top put spring onion, ginger, anise star and Szechuan peppercorn.  Then pour in all the marination soy sauce.
5)  Steam for 2 hours.

Roasted Chicken With Herbs



Ingredients:

   1 no             Whole Chicken-Small Size
   1 pc              Zuchini
1/2 pkt             Baby Carrot
   2 nos            Large Onion
 10 cloves        Garlic
   1 stalk           Rosemary            
   1 stalk           Thyme
   1 no               Lemon
   2 nos             Pink Potatoes
   1 cup             Chicken Broth
Salt 
Black pepper
Grapeseed Oil

Marinade Chicken:
Salt 
Black pepper
Butter
Cayne
Paprika
Ground Rosemary
Ground Thyme
Onion powder
Garlic Powder

Bake at preheat oven 220 C for 1 hour.

Bread Pudding



Ingredients:
4 cups Bread Cubes
3 tbsps Melted Butter
1 1/2 cups Milk
1/2 cup Whipping Cream
2 nos Whole Eggs
1 no Egg York
1/4 cup Sugar
1/4 tsp Salt
1 tsp Cinnamon Powder
1/4 tsp Nutmeg Powder
1/2 cup Raisin (presoak in water)
I use dry cranberries
Bake at preheat oven 180 for 45 minutes.

Fudge Brownies



Ingredients:

1 cup Nuts
1 tbsp Butter
1 tsp Salt
1) Pan roast for 8 minutes.

4 oz Chocolate ...
1 1/4 cup Butter (10 oz)
2) Melt chocolate & butter. 


1 cup Granulated Sugar
3/4 cup in Light Brown Sugar 


3) Off fire, mix in sugar.
3 nos Eggs


4) Well mix the egg, one at A time.
2 tsp Vanilla Extract
1 cup All Purpose Flour
1/4 cup in Cocoa Powder (Sift)


5) Mix into the chocolate & egg mixture.
1/2 tsp Salt


6) If nuts did not use salt, add in 1/2 tsp salt,
7) Bake at preheat oven at 175 for 20 minutes.

Assam Pedas Ikan Tenggiri


Assam Pedas Paste:
1 kg Shallot
2 nos Garlic
3 Pc Serai
3 nos Buah Keras
1 Pc Tumeric
Some Belacan
RM 1.00 Dry Chilli

1) Blend all ingredients, except belacan.
Dry chilli blend separately.

2) Heat oil put in 1 tbsp chilli paste and belacan, cook till the color of red come out.

3) Add in all blended ingredients and continue to cook in Low frame.

4) Last add in salt and sugar.

2 Pcs            Ikan Tenggiri
1 no             Large Tomato
1 no             Big Onion
3 cloves       Garlic
Few stalks  Daun Kesum
2 tbsps        Assam Paste
5 Pcs           Assam Keping
2 tbsps        Seedless Tamarind Paste
1 bowl        Water
Salt and sugar to taste

Butter Cake



Butter Cake
Ingredients:
225 g (1 cup) Butter
200 g (1 1/4 cup) Castor Sugar
4 nos Eggs...
1 tsp Vanilla Essence
200 g (1 1/4 cup) Cake Flour
1 tsp Baking Powder
1 tsp Salt
4 tbsps Milk
1) Beat egg & sugar till light & fluffy.
2) Add in egg one at a time.
3) Add in vanilla essence.
4) Well mix cake flour, baking powder & salt.
Then mix into the butter mixture.
5) Last stir in 4 tbps of milk.
6) Bake in preheat oven at 180 C for 40 to 50 minutes.
7) Remove from oven, let cool before cut.

Classic Chocolate Cookies

2 Recipe for 48 pcs Cookies
Ingredients:
1 cup (230 g)       Butter (Room Temperature)
1 cup                    Granulated Sugar
1 cup                    Light Brown Sugar

1)  Well mix butter, granulated sugar & light brown sugar.

2 nos                    Eggs - lightly beat
2 tsp                     Vanilla Extract

2)  Mix into (1)

Sift:
2 1/2 cups            All Purpose Flour
      2 tbsp             Cornstarch
      1 tsp               Baking Soda
      1 tsp               Salt

3)  After sift all dry ingredients, mix into the butter mixture.

3 cups                  Chocolate Chips
2 cups                  Toasted Nuts - chopped

4)  Well mix with the above batter.
5)  Shape into a ball shape, chill in fridge for at least 1 hour.
6)  Bake in preheated oven at 165 C or 325 F for 15 to 18 minutes.

*If freezer up, must thaw in room temperature for 1/2 hour before bake.
