南瓜焖饭 Pumpkin Rice










Ingredients :
100 g               Smoked Bacon - Cut into thin stripes
  10 g               Dried Salted Fish - Diced (I did not put)
    4 cloves       Garlic - Peeled and minced
150 g               Pumpkin Flesh (without skin) - cubed
    3 no             Shitake Mushrooms - Slice it
    1 cup           Long-Grained Rice - Washed and rinsed
Water to cook the rice (ratio of about 1 cup rice to 1 1/4 cups of water)

To Taste:
Salt

To Garnish:
Coriander or mint leaves

Method :
1)  Heat wok fry bacon slices until they are just cooked on the surface and bacon oil is coming out.
2)  Add garlic and stir fry for 30 seconds.
3)  Add mushrooms follow by pumpkin and stir fry for 1-2 minutes.
4)  Add uncooked washed rice and stir fry until the onions are clear.
5)  Add water & salt into the wok and bring to boil.
6)  Turn the slow frame to cook the pumpkin rice.
7)  Once the rice is cooked turn of the frame & let it stand in wok for 10 minutes.
8)  Garnish with coriander or mint leaves, before served.
