Roasted Chicken with Lemon,Garlic & Basil In Beer




Ingredients

    4 nos        Whole Chicken Legs & Thighs
  12 cloves     Whole Garlic - Peeled
    1 no          Lemons - Cut in wedges
    1 can        Beer
A handful of basil leaves
Rock Salt
Ground Black Pepper
Olive Oil

Method:

1)  Preheat your oven to 390 degrees.
2)  Rinse & pat dry your chicken before adding it to a large roasting pan.
3)  Season it with salt & black pepper.
4)  Drizzle a generous amount of olive oil over the chicken – enough so that it starts to pool in the bottom of the pan.
5)  Cut your lemons in wedges, squeeze them over the chicken and then add what remains of the lemons to the pan.
6)  Add in basil, garlic & beer to the pan as well.
7)  Roast for 30 to 40 minutes.
8)  Remove the chicken & beer stock from the pan before serving.
