Pasta with Pesto Cream Sauce





















Ingredients:
Pesto Sauce:
     2 cups                 Fresh Basil Leaves
   60 g                      Pine Nuts
     5 cloves              Garlic, Peeled
  1/3 cup                  Extra Virgin Olive Oil
Salt And Pepper, to taste

Pesto Cream Sauce:
     1 cup                 Heavy Cream
     1 cup                 Milk
     2 tbsp                Butter
  1/4 cup                 Grated Parmesan Cheese
     1 pkt                  Pasta
     1 pkt                  Cherry Tomatoes, Diced
     2 tbsp                 All Purpose Flour
Pesto Sauce

Method:

  1)  Cook pasta until al dente.
  2)  To make pesto sauce, blend basil leaves, pine nuts, garlic, salt and pepper in a food processor or blender.
  3)  Continue blending until combined, adding additional olive oil if needed. Set aside.
  4)  Heat butter with flour then add in cream and milk in a small saucepan over medium-low heat.
  5)  Add pesto sauce and stir.
  6)  Drain pasta and place in a serving bowl.
  7)  Pour pesto cream over the top.
  8)  Toss to combine.
  9)  Add diced tomatoes and toss quickly.
10)  Serve immediately.
