Easy Mini Cooked Ham & Broccoli Pies

INGREDIENTS:

Chicken-Broccoli Mixture:
    1 tbsp             Grape seed Oil
    1 Cup             Cook Ham, cut into bite-size pieces
    1 no                Chopped Medium Onion
    1 cup              Chopped Broccoli
 1/2 tsp               Salt
 1/4 tsp               Pepper
    1 cup              Shredded Cheddar Cheese

Baking Mixture:
1/2 cup              Original Bisquick® mix
1/2 cup              Milk
   2 no               Eggs

Method:

  1)  Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  2)  In a nonstick pan, heat oil over medium-high heat.
  3)  Saute onion then add cooked ham, broccoli, salt and pepper cook 2 to 3 minutes.
  4)  Cool 5 minutes; stir in cheese.
  5)  In medium bowl, stir baking mixture ingredients with whisk or fork until blended.
  6)  Spoon 1 tbsp baking mixture into each muffin cup, top with about 1/4 cup ham & broccoli mixture.
  7)  Spoon 1 tbsp baking mixture onto ham & broccoli mixture in each muffin cup.
  8)  Bake about 30 minutes or until toothpick inserted in center comes out clean and tops are golden brown.
  9)  Cool 5 minutes before remove from muffin pan.
10)  Cool 10 minutes longer, and serve.
