通心粉,罗勒酱和松子 Macaroni In Pesto Sauce & Pine Nut
Ingredients:
8 ounces Cooked and drained Macaroni
1 1/4 cup Basil Pesto, homemade or store-bought
1/2 pkt Cherry Tomatoes (as many as you want)
1/2 tbsp Lemon Zest – optional
2 1/2 tbsp Olive Oil
1 tbsp Extra Virgin Olive Oil
3 cloves Garlic, peeled and sliced
1 cup Pine Nuts, lightly toasted in a skillet until golden and cooled
salt to taste
For Garnish:
A few fresh basil leaves , optional
Method:
1) In a large pan, add garlic slices to sautee it then add in cherry tomatoes.
2) Cook for a couple of minutes at high heat until they start to soften and pop and also get charred and small blisters on the skin.
3) Add the drained pasta and toss well for the oil and veggies to combine the pasta.
4) Add the pesto and toss carefully.
5) If the pasta feels too dry, add the reserved pasta water.
6) Switch off the heat add in salt, pine nuts, zest.
7) Mix in some extra virgin olive oil.
8) Garnish with fresh basil and serve warm.
