蒸酸梅汁石斑鱼肉片Steamed Grouper Fillet With Pickled Lime & Sour Plum Juice



Ingredients:
600 g         Grouper Fillet
    1 pc       Soft Bean Curd, cut in cube
    1 pc        Big Tomato, cut in wedges
    2 stalks   Spring Onion, cut in 1" long
    1 pc         Ginger, Shredded
     1 pc        Red Chili, Shredded
Marinade Sauce:
     2 no       Pickled Lime & Sour Plum
     1 tbsp    Pickled Lime & Sour Plum Juice
     2 tbsp    Light Soy Sauce
  1/2 tsp      Brown Sugar
     1 tbsp    Chinese Rice Wine
     1 tsp      Sesame Oil
A Dash of White Pepper Powder
Method:
1)  Clean and pat dry grouper fish meat, cut in thick pieces or sliced.
2)  Marinade the grouper fish fillet with marinade sauce for 15 minutes.
3)  Put 1/2 of shredded ginger and 1/2 of spring onion into a serving plate.
4)  Place the marinated grouper fish fillet on top of the shredded ginger and spring onion.
5)  Put soft bean curd & tomato around the grouper fish fillet and sprinkle the balance of shredded ginger on top.
6)  Bring to boil water in a steamer pot and steam the grouper fish fillet for 8 minutes in high heat.
7)  Off the fire and left the grouper fish fillet in the steamer for another 5 to 7 minutes.
8)  Sprinkle the balance of spring onion and shredded red chili for garnishing.
9)  Serve with white rice.
