焖腐竹蒜石斑鱼 Braised Garoupa Fish With Fried Bean Curd & Garlic















Ingredients:
材料:

500 gm          Fish
500 gm          鱼
100 gm          Fried Bean Curd
100 gm          炸腐竹
    1 big no     Garlic ( Whole clove)
    1 大粒       蒜头 (一粒粒整小粒)
    2 stalks      Scallion (Cut in 1" long)
    2 棵          切葱段
    1 tsp          Salt
    1 茶匙       
    1 tbsp        Flour
  1  汤匙        薯粉
Oil For Deep frying


Seasoning:
调味:

   2 cup          Water
   2 杯            水
   2 tbsp         Light Soy Sauce
   2 汤匙       豉油
1/2 tsp           Dark Soy Sauce
1/2 茶匙       黑豉油
1/2 tsp           Sugar
1/2 茶匙       
A Dash of White Pepper Powder
少许胡椒粉
   1 tbsp        Oyster Sauce
   1 汤匙      耗油(我没用蚝油)

Method:
做法:

1) Cut fish, pat dry & cut into pieces.
       将鱼洗净,切小块。
2)    Marinade with salt & coated with some flour.
        撒一层簿盐和薯粉
3)    Heat oil, deep-fried garlic, then follow by the fish till fish golden brown.
        热油炸好蒜头 ,才放入鱼块,炸至两面金。
4)    In another clean pan, heat oil add in fried garlic to saute till fragrant.
       热锅下油爆香炸蒜头。
5)    Then add in fried bean curd & water, braised till fried bean curd soft.
        放入炸腐竹,再加水先焖直软。
6)    Add in fried fish, pepper powder, sugar, dark soy sauce & light soy sauce to taste.
       加入煎好的鱼再加入少许胡椒粉,糖,鼓油,黑豉油调味。
7)    Last put in scallion, served it.
       最后放入葱段即可。
