糖醋红鲷鱼 Sweet & Sour Red Snapper









Ingredients:
For the fish:
600 gm            Red Snapper(Any firm white fish will work)
1/2 tsp             Salt
1/2 tsp             White Pepper
1/2 tsp             Oil For Air Fry

For the sauce:
1/2 no             Big onion (Large diced)
   2 nos           Tomatoes (Large diced)
   2 stalks        Scallion (Cut in 1" long)
   1 tbsp          Plum Sauce
   3 tbsp          Tomato Ketchup
   2 tbsp          Sugar
   1 tbsp          Vinegar

Method:

1)  Pat fish dry and marinade with salt, pepper and oil.
2)  Heat air fryer at temp 180 C for 5 minutes.
3)  Air fry fish for 20 minutes or till golden brown on both sides.
4)  Transfer to a plate while you prepare the sauce.
5)  In a clean sauce pan, add in big onion, tomatoes, scallion, plum sauce, tomato ketchup, sugar & vinegar.
6)  Bring to boil the sauce.
7)  Pour the sauce over the fried fish.
8)  Served in hot.
