Grilled Sanma (Japanese Style)




Ingredients:
Sanma (秋刀魚)
sea salt
freshly grated black pepper
S&B assorted chili pepper

Method: 
  1)  Cut the sanma, clean well and then wipe dry with kitchen papers.
  2)  Generously sprinkle and rub with sea salt and pepper on both sides and inside.
  3)  Season with assorted chili pepper.
  4)  Preheat a toaster oven at 160C/320F.
  5)  Line a baking tray with aluminum foil or baking paper, greased with a bit of oil.
  6)  Place the fish on the lined baking tray.
  7)  Bake in the preheated oven for about 15 to 20 minutes, or until cooked through and the fish skin becomes lightly brown.
       or
  8)  Grease grill pan & place the sanma on and grill in medium-low frame until cooked through and the fish skin becomes lightly brown.
  9)  Serve immediately.
10)  Sprinkle more assorted chili pepper if you like.
