芋头糕Steamed Yam Cake(Or Kuih)

Recipe Adapted From Nasi Lemak Lover







Ingredients 
750 g              Yam, cut cubed and steam it
500 g              Rice Flour
  40 g              Tapioca Flour
900 g              Water
150 g              Dried Shrimps, soaked and chopped coarsely
  10 nos           Shallots, slices

Seasonings:
2 tsp              Salt or to taste
2 tsp              Sugar
3 tsp              Chicken Stock Powder
3 tsp              White Pepper Powder
2 tsp              Five Spice Powder

Garnishing:
Fried Chopped Dried Shrimp
Fried Small Onion
Chopped Spring Onion
Chopped Fresh Red Chili

1.  Mix all seasonings with rice flour, tapioca flour and water (except dried shrimp and shallot) by hand whisk till a watery batter.

2.  Heat oil in a non stick pan, sauté shallots till golden brown. Set aside.

3.  Heat oil add in dried shrimps and stir fry till fragrant. Set aside.

4.  Don't wash the pan, add in cooked yam and stir fry for 1 minute.

5.  Pour in the watery batter and cook mixture in low heat and keep stirring all the time, until the mixture turns into a thick paste.

6 . Pour the paste into a greased cake tin. 

7.  Smoothen the surface with a spatula. 

8.  Place the yam mixture into the steamer and steam over high heat for 45 minutes.

5. Remove the cake and allow it to cool thoroughly before cutting into slices.

6. Garnish with fried shrimp, fried shallot, chopped spring onion and red chili on top.

7. Serve with sweet chili sauce.
