Ingredients:
2 tbsp Grapeseed Oil
2 no Onion, finely chopped
2 sticks Celery, finely chopped
2 no Large Potatoes, peeled, cut in cubed
1 each Yellow, Red Purple Pepper Bell, chopped
2 no Tomatoes, chopped
3 cloves Garlic, chopped
500 g Sausages
1½ tsp Sweet Smoked Paprika
1 btl Tomato Paste
2 sprigs Fresh Thyme
125 ml White Wine (Optional)
1 can White Bean, drained and rinsed
1 can Baked Bean
1 can Chick Bean, drained and rinsed
1 bunch Sweet Basil
Salt and Black Pepper Powder to Taste
Method:
1) Heat the grapeseed oil in a large heavy-based pan.
2) Add the onion and sprinkle some salt cook gently for 5 minutes.
3) Add the sausages and fry the sausages for 5 minutes.
4) Add in celery, pepper bell, potatoes, chopped tomatoes and cook for a further 5 mins.
5) Stir in the garlic, follow by add in all beans, tomatoes paste and white wine.
6) Well mix all ingredients and add in fresh thyme.
7) Cover with lid and simmer in low heat for 40 minute.
8) Remove the thyme and season with salt and black pepper powder.
