炖香肠和豆子Sausage & Bean Stew
Ingredients:
2 tbsp Grapeseed Oil
2 no Onion, finely chopped
2 sticks Celery, finely chopped
2 no Large Potatoes, peeled, cut in cubed
1 each Yellow, Red Purple Pepper Bell, chopped
2 no Tomatoes, chopped
3 cloves Garlic, chopped
500 g Sausages
1½ tsp Sweet Smoked Paprika
1 btl Tomato Paste
2 sprigs Fresh Thyme
125 ml White Wine (Optional)
1 can White Bean, drained and rinsed
1 can Baked Bean
1 can Chick Bean, drained and rinsed
1 bunch Sweet Basil
Salt and Black Pepper Powder to Taste
Method:
1) Heat the grapeseed oil in a large heavy-based pan.
2) Add the onion and sprinkle some salt cook gently for 5 minutes.
3) Add the sausages and fry the sausages for 5 minutes.
4) Add in celery, pepper bell, potatoes, chopped tomatoes and cook for a further 5 mins.
5) Stir in the garlic, follow by add in all beans, tomatoes paste and white wine.
6) Well mix all ingredients and add in fresh thyme.
7) Cover with lid and simmer in low heat for 40 minute.
8) Remove the thyme and season with salt and black pepper powder.

煎烤照烧汁鲑鱼头Pan Fried Teriyaki Salmon Fish Head
1 whole Salmon Fish Head - Wash & cut in pieces
2 tablespoons of grapeseed oil (for sautéing)
Marinade Sauce(Teriyaki sauce):
1/4 cup Soy Sauce
1/4 cup Mirin
1/4 cup Sake
1 tbsp Brown Sugar
Method:
1) Wash, cut in pieces and pat dry salmon fish head.
2) Marinade the salmon fish head with marinade sauce for at least 1/2 hour.
3) Separate the salmon fish head from the marinade sauce.
4) Heat 2 tbsp of oil in a non-stick pan, sear the salmon fish head for both side till slightly brown.
5) Pour in the marinade sauce and cook in high heat till the sauce thicken and well coated all the salmon fish head.
6) Transfer salmon fish head to a serving dish together with the remaining thickened sauce.
7) Serve with Japanese steamed rice.
烤娘惹酱鲭鱼片Baked Mackerel Fillet in Nyonya Sauce
Ingredients:
4 pcs Fresh Mackerel Fillets
1 packet Nyonya Sauce
2 no Tomatoes - cut in wedges
4 pcs Lady finger
Aluminium Foil
Method:
1) Clean and pat dry the mackerel fillet with a paper hand towel.
2) Rub mixture over the surface of the fish.
3) Place fish in the center of aluminium foil.
4) Top with tomato wedges and lady finger.
5) Fold aluminium foil and wrap the fish.
6) Preheat oven at 200 degrees C.
7) Place the package in the baking tray and bake for about 25 to 30 minutes until the fillet turned white and opaque.
8) Remove the fish from the foil and place the fish in a serving plate.
9) Garnished with fresh thinly sliced sweet yellow onions and more fresh chopped cilantros.
10) Serve with hot rice.

炉烤肉排Oven Baked Spare Ribs
Ingredients:
Pork Spare Ribs
Hoisin Sauce
Char Siew Sauce
Sweet Cili Sauce
Soy Sauce
BBQ Sauce
HP Sauce
Worcestershire Sauce
1) Mix all the sauce ingredients and apply 1/2 portion sauce on the pork spare and marinade for at least 24 hrs.
2) Preheat oven at 250 C.
3) Wrap the spare rib with aluminium foil.
4) Bake for 1 hour.
5) Remove foil apply the balance of marinade sauce and bake for another 15 minutes.
空气油炸锅鸡块Air Fryer Chicken
Ingredient:
1 no Kampung Chicken
1 pkt Fried Chicken Flour
1 tbsp Grapeseed Oil
Salt
Method:
1) Wash chicken, pat dry and cut in big pieces.
2) Season the chicken with salt and apply oil onto the whole chicken.
3) Coat fried chicken flour onto the chicken.
4) Marinade for at least 1/2 hour.
5) Preheat air fryer at temp. 180 C for 3 minutes
6) Spare cooking oil on grill pan.
7) Place in the chicken and air fry at temp 180 C for 20 minutes or till chicken golden brown and crispy. .
