豉汁凤爪Braised Chicken Feet In Fermented Black Bean
Ingredients:
1 pkt Fried Chicken Feet
1 pc Minced Ginger
5 cloves Minced Garlic
5 birds Minced Chilli Padi
1 tbsp Fermented Black Bean
2 pcs Fermented Soy Bean (Nam Yu)
1 tbsp Sugar
Oil
1/2 bowl Water
1) Cut fried-chicken feet into 2 pieces, wash it.
2) Porch the fried-chicken feet in the boiling water for 15 minutes, take out rinse & pat dry.
3) Heat oil stir-fry minced ginger, minced garlic, minced chilli padi, fermented black bean & fermented soy bean(Nam Yu) till fragrant then add in the chicken feet, & water to cook till the sauce thicken. Add sugar & taste it before take out.
4) Keep in the refrigerator, steam for 15 to 20 minutes before served.

180 cc Cold Water冷水
28 g Unsalted Butter無鹽奶油
14 g Sugar細砂糖
1/2 tsp Salt鹽(約2.5g)
250 g High Protein Flour高筋麵粉
30 g Whole Wheat Flour全麥麵粉
3/4 tsp Instant Yeast速發酵母(約2.5g)
Leaven Dough & Bake

180 cc Cold Water冷水
28 g Unsalted Butter無鹽奶油
14 g Sugar細砂糖
1/2 tsp Salt鹽(約2.5g)
250 g High Protein Flour高筋麵粉

酱蒸豆腐石斑鱼尾Steamed Grouper Fish & Bean Curd With Soy Beans Sauce
Ingredients:
Marinade Fish:
1 no (600 g) Grouper Fish
1 tbsp Light Soy Sauce
1/2 tsp White Pepper Powder
2 tbsp Chinese Rice Wine
1/2 tsp Sesame Oil
1 pc Soft Bean Curd - cut into small square pieces
Soy Beans Mixture:
1 tbsp Fermented Soy Beans
3 cloves Chopped Garlic
3 tbsp Chopped Ginger
3 no Eye Bird Chili, chopped
1 tsp Sugar
1/2 tsp Sesame Oil
Garnish:
Chopped Parsley
Method:
1) Clean, scale & gutted the fish, lightly rub with marinade fish sauce.
2) Well mix soy bean mixturer and spread evenly onto the fish.
3) Set aside to marinade for 15 minutes.
4) Bring to boil water in a steamer.
5) Arrange square bean curd beside the fish.
6) Steam the fish in a preheat steamer in high heat for 25 to 30 minutes.
7) Off the heat and garnish with chopped parsley.
法國白吐司-Pain De Mie(Bread Machine-French)
1 lb / Medium Crust
1.30 Removed Blade
材料:
180 g Lukewarm Water温水
30 g Maltose or Honey麥芽糖(1大匙)
15 g Unsalted Butter無鹽奶油
1/2 tsp Salt鹽
280 g High Protein Flour高筋麵粉
1/2 tsp Instant Yeast速發酵母(2 g)

罗望子虎虾Tamarind Tiger Prawns
500 gm Tiger Prawns
2 tbsp Seedless Tamarind Paste
(If got pulp add 4 tbsp water to extract the juice)
2 tbsp Sugar
2 tbsp Light Soy Sauce
1 tsp Dark Soy Sauce
4 tbsp Oil (Must more oil, the prawn will turn out better)
- Mix the tamarind pulp with 4 tablespoons water. Extract the juice from the tamarind by pressing the pulp. Usually I use seedless tamarind paste.
- Rinse prawn with water and pat dry with paper towers.
- Add the tamarind juice and pulp, sugar, light soy sauce and dark soy sauce into the prawn and mix well with your hand. Marinate for overnight. Remove the tamarind pulp before cooking.
- Heat up a wok and add cooking oil. As soon as it’s heated, drop the prawns into the wok and pan fry until cooked and sauce thicken. Dish out and serve immediately.

Ingredients:
1.5 kg Clam
2 tbsp Chopped Ginger
1 tbsp Chopped Garlic
1/2 cup Water
Sour and Spicy Sauce:
1 tbsp Chili Sauce
3 tbsp Tomato Ketchup
2 tbsp Sugar
1 tbsp Apple Cider Vinegar
1/2 tsp Oyster Sauce
1 no Beaten Egg
1/2 tbsp corn starch dissolved in 1/2 cup water
2 tbsp Grapeseed Oil
Some chopped cilantro (coriander leaves) for garnishing
Method:
1) Rinse the clam with cold water and pat dry it.
2) Heat up a wok and add the grapeseed oil.
3) When the oil is hot, add the chopped garlic and ginger to stir-fry until aromatic, then add in the clam.
4) Than add in sour and spicy sauce mixture, except the egg .
5) Adding 1/2 cup of water to cook the clam till the shell fully open before adding the corn starch solution.
6) Bring the gravy to boil (add some more water if needed) and then add the beaten egg.
7) Let it cook for about 1 minute or until the egg is set.
8) Dish out and garnish with chopped Cilantro.
0) Serve immediately.

50 g Unsalted Butter

500 g High Protein Flour
1 tsp Instant Yeast (2 tsp - If using quick double the quantity of yeast)
