蒸木薯糕 Steamed Cassava Tapioca Cake











Ingredients:
1 no.       Shredded Coconut
1/8 tsp     Salt
6 pc        Panana leaf (optional)

500g        Grated Cassava (Tapioca)
180g        Brown Sugar
200 ml      Coconut Milk
1 1/2 tbsp  Potato starch
Pinch of salt

Method:

1)  Combine the shredded coconut, salt & pandan leaf in a stainless steel dish and steam for 5-10 minutes. Set aside to cool.

2)  Mix the grated cassava, brown sugar, coconut milk, potato starch and pinch of salt until well mixed.

3)  Pour the mixture into a square pan. Level the top of the mixture with the base of a spoon.

4)  Steam the cassava mixture for 35-40 minutes on medium heat.

5)  Remove the pan from the streaming tray when it is done.

6)  Let it cool completely before cutting.

7)  Cut into small squares and toss with the shredded coconut before serving.
