Recipe Adapted From mykitchensnippets
Ingredients:
4 pcs Yee Mee
18 no Fresh Water Prawns – clean and cut into halves. Season with a bit of salt and pepper
4 cloves Chopped Garlic
1 pc sliced Ginger (1 1/2" long)
6 stalks Spring Onions – cut into 1” length
250 g Choy Sam
6 cups Broth
3 egg – beaten
1 tbsp cornstarch mix with 2 tbsp water
Seasonings:
1/2 tbsp Chicken Powder
6 tbsp soy sauce
a few dash of sesame oil
4 tbsp Chinese cooking wine
Salt and pepper to taste
Method:
1) Soften the yee mee in water, rinse and set aside.
2) In a wok heat up about 1 tbsp of oil and sauté the garlic and ginger until fragrant and lightly brown.
3) Add in fresh water prawn and yee mee.
4) Follow by the broth and add in all the seasonings except the cooking wine.
5) Cover with lid to bring to boil then put in choy sam and let it cook for 2 minutes.
6) Add in the cooking wine and cornstarch mixture to let the gravy become thickens.
7) Lastly stir in the egg, give it a few stir and turn off the heat.
8) Add in the spring onions.
9) Serve warm.
