Lunch 10th CNY 2015









Buttermilk Prawn











 


Ingredients:~
250gms prawns, cleaned
1/2 tsp salt
1/2 tsp pepper
3 heaped tbsp cornflour
1 cup of oil, for frying
Buttermilk Sauce:~
1 tbsp Mixed of Turmeric & Curry Powder
4 tbsp butter
3 birds' eye chillies, sliced
2 stalks of curry leaves
1 flat tbsp sugar
3/4 cup of evaporated milk
~Method~
Heat oil in a pan
Marinade prawns with salt & pepper.
Coat the prawns evenly with the cornflour & remove excess flour.
Fry the prawns in the hot oil & cook for 1 minute on each side.
Place the prawns in the Buttermilk Sauce & serve.

~Method for Buttermilk Sauce~
Melt butter in a pan.
Sautee the bird's eye chillies , curry leaves & turmeric & curry powder till fragrant.
Pour in the milk & simmer gently.
Flavour with sugar.
Cook for a further 3 minutes on very low fire until gravy thickens a little.
Place fried prawns into the gravy.
Serve with hot rice!

Stir-Fried Pak Choy






香菇焖小鲍鱼Braised Baby Abalone With Mushrooms











Ingredients:
1 can Baby Abalone in Soup
250 g Dried Shiitake Mushrooms - Soak in water till soft
5 cloves Minced Garlic
1 tbsp Grapeseed Oil
1 cup Mushroom Water (Water that soak Dried Shiitake Mushrooms)
2 tbsp Mushroom Sauce
1 tbsp Light Soy Sauce
1/2 tsp Sesame Oil
1 tbsp Rice Wine
1 tbsp Corn Flour mix in 80 ml (⅓ c) water
For the mushrooms marinade:
1 tsp Minced Ginger
1 tbsp Minced Onion
1 tbsp Light Soy Sauce
1 tbsp Sesame Oil
1 tbsp Sugar
1 tbsp Rice Wine
For Garnish:
Boiled Broccoli
Method:
1) Soak the mushrooms in water till soft.
2) Remove the stems (save the mushroom water).
3) Marinate the mushroom with mushroom marinade in a medium sized bowl, for at least 1/2 hour.
4) Heat the oil in a large frying pan and sauté the garlic, then add the mushrooms and sauté until fragrant, about 2-3 minutes.
5) Add the mushroom water, mushroom sauce, light soy sauce, sugar & a a drop of dark soy sauce.
6) Bring to boil and simmer with the lid on for 30 minutes.
7) Add in baby abalone and uncover to allow the sauce to reduce, about 5-10 minutes.
8) Add the rice wine and bring back to the boil, then add in the corn flour mixture to thicken the sauce.
9) Before serving sprinkle over the sesame oil and enjoy!

回锅香辣猪蹄 Twice Cooked Spicy Pig's Trotters












Ingredients:
2 no             Pig's Trotters
1 stalk         Spring Onion
2 stalks       Leek, wash cut it
 1 pc            Chopped Ginger
1 pc             Chopped Red Chilli
 2 no           Star Anise
1 tbsp         Apple Cider Vinegar
 2 tbsp        Rice Wine
1 tbsp         Fermented Black Bean
1 tbsp        Taucho
2 tsp           Sugar
1 tsp          Dark Soy Sauce
1 tbsp       Grapeseed Oil

Method:
1)  Wash the Pig's Trotters, put Pig's Trotters in a pot and add in water and apple cider vinegar.
2)  Once boiling off frame, rinse the Pig's Trotters and drain it.
3)  In a pressure cooker, put in Pig's Trotters, spring onion, ginger, star anise and water.
4)  Cook the Pig's Trotters in pressure cooker for 1/2 hour.
5)  Take out the Pig's Trotters and drain aside.
6)  Heat oil, stir-fry saute fermented black beans and taucho till red in coloring.
7)  Add in chopped ginger and chopped red chili continue to stir-fry till fragrant.
8)  Put in the precooked Pig's Trotters and add in dark soy sauce and sugar to continue stir-fry till Pig's Trotters coated dark soy sauce evenly.
9)  Stir-in leek before off frame.
