蜂蜜小面包 Small Honey Bread (韩国小馒头)










Ingredients (原料):
260 g             Bread Flour (高粉)
115 g             Cake flour (低粉)
    4 g             Instant Yeast (酵母)
  35 g             Sugar ( 糖)
    4 g             Salt (盐克)
150 g             Fresh Milk (牛奶克)
  65 g             Egg (蛋液)
  55 g             Honey (蜂蜜)
  25 g             Butter (黄油)

       1 tsp          Honey (蜂蜜)
       1 tsp           Extra Virgin Olive Oil (橄榄油)
        1 tsp          Water 水

Method (做法):
1)  Mix yeast, milk, egg, sugar, salt & honey then pour in bread flour and cake flour to knead.
      After form a dough add in melted butter continue to knead till elastic.
  将酵母,牛奶,蛋液,糖,盐和蜂蜜混合均匀,倒入高粉和低粉,揉成光滑面团,
  加入软化的黄油,继续揉至面筋扩展。
2)  Place dough in a bowl and cover with damn cloth, rise for 1 hour or double in size.
  收圆入盆做基础发酵至两倍大,用手指戳入,不快速反弹,也不凹陷。
3)  Take out punch the dough to let out the air, divide to 10 portions.
     Shape it to round ball and to rest for 15 minutes.
   取出面团,排气,分割成10个,滚圆,中间发酵15分钟。
4)  Take a round dough roll to long shape, then flatten it.
      Roll the dough to from center to out for both side.
   取一个面团,揉搓成长条,按扁,由中间开始分别向两头擀开擀薄,底边压薄。
5)  Fold or roll the dough from one side to another side.
      Cut center of the dough to divide into two and cut side face down to the baking tray.  
   由上而下卷起,收口捏紧,从中间一切为二,切面朝下间隔排入刷了油的烤盘里。
6)  Rise again for 1 hour or till double in size.
   进行最后一次发酵至两倍大。
7)  Well mix honey, olice oil and water.  Set aside.
     将蜂蜜,橄榄油和水调和均匀成蜂蜜水。
8)  Bake in a pre-heat oven at 170 C for 15 minutes or till golden brown
      170度,烤至上色后,再拿出来刷蜂蜜水,再烤至上色均匀即可,约15分钟。

白菜,豆腐 & 有机猪肉片汤 Cabbage, Bean Curd & Organic Pork Slice Soup


Cabbage                 白菜
Carrot Sliced           胡萝卜片
Bean Curd               豆腐
Organic Pork Slice   有机猪肉片汤
Scallion                    葱段
Vegetable Broth       菜汤

Bring to boil the above ingredients & taste with salt.

冷当鸡 Chicken In Rendang Minang



A)   2 whole Chicken - Cut into pieces, wash & dry it.

B)   1/2 no shredder coconut  - Pan-fry the shredder coconut till brown and dry.
                                                  Then blend it set aside.(Kerisik)

C)   5 no            Big Onion
     10 cloves     Garlic
       9 stalks      Lemon Grass
       1 pc           Ginger
       1 pc           Fresh Turmeric
      15 pcs        Dried Red Chilli
      20 pcs       Chilli Padi
        1 pc         Galanga

D)    3 nos       Coconut (Santan)

E)    Salt - To taste
        Turmeric Leaves
        Lime Leaves

Blend ingredient C & stir-fry till fragrant. Add in Chicken to cook follow by the coconut (santan) & bring to boil for 20 minutes or till chicken cooked.

Put in salt to taste & add in kerisik, turmeric leaves and lime leaves. Well mixed all the ingredients or till the gravy thicken. Garnish with lime leaves & serve with rice.

免揉的麵包 No Knead Bread















  

 



(Recipe From Carol)

Ingredients (材料):
390 g     High Protein Flour (高筋麵粉)
  1 tsp   Salt (鹽)
1/2 tsp   Instant Yeast (速發酵母)
300 g     Water (水)

Method (步驟):

1)  Use hand to well mix the high protein flour, salt & yeast in a plastic container.
    將高筋麵粉+鹽+速發酵母放入盆中,用手將所有材料混合均勻
2)  Add water to mix with flour (no need knead).
    加入水,然後用手直接攪拌均勻就好(不用揉)
3)  Then cover the container and tie-up with a plastic bag leave it at room teperature for 12-18 hours, even more up to 24 hours.
    套上一個大塑膠袋,把口封緊,放在室溫12-18小時,就算24小時也沒關係
4)  The dough will rise up with lots of air, pour the dough on top of at table with flour and sprinkle some flour on top of the dough.
    Then gentely pat the dough to let the air out.
    發酵好的麵團(這時候的麵團整個充滿大氣泡,帶有濃厚的發酵味道)用刮板取出放置到灑上高筋麵粉的桌子上,輕輕拍平,表面灑上高筋麵粉.
5)  The dough is folded around and then fold, covered with plastic bags rest for 15 minutes.
    將麵團左右折起再對折,蓋上塑膠袋放置15分鐘
6)  Shape the dough into a whole round and placed in the sprinkled with flour on the baking cloth.
    The dough surface with flour too, then let rise for 2 hours.
    將麵團稍微整成圓形,放置在灑上高筋麵粉的烘焙布上,麵團表面灑上高筋麵粉,蓋上布放置2小時
7)  When dough rise up to 1.5 hours, place the casserole into the oven at 230 degrees C for preheating.
    當麵團發酵到1.5小時,將砂鍋放入烤箱用230度C預熱
8)  Preheating is finished, the dough from the fermentation of cloth into the casserole(casserole is very hot,careful handling).
    Cover the lid then into the oven and bake for 30 minutes with 230 degree C.
    預熱完成,將麵團從發酵布移到砂鍋中(砂鍋很燙,拿取千萬要小心),蓋上蓋子放入烤箱用230度C烘烤30分鐘
9)  One complete take out the bread from casserole.
    拿出砂鍋打開鍋蓋就完成了

酱爆豆腐 Stir-Fried Bean Curd with Spicy Bean Paste

材料:

豆腐,香菇,蒜片,豆瓣酱,糖,盐,葱段,青椒,黄椒和红椒

做法:

1)  豆腐买回来冲洗下,然后豆腐切块。
2)  锅中底油,油热放蒜片,葱段,香菇,豆瓣酱,爆香一下,20秒就可以了。
3)  锅中加半碗水,加些糖,少些盐,水开倒入豆腐。
4)  大火烧至收干汁加入葱段,青椒,黄椒和红椒。
5)  淋上少许油翻炒一下豆腐会比较漂亮,蛮香的。

冬菜蒸肉碎 Steamed Minced Meat W. Preserved Cabbage



Ingredients:
Preserved Cabbage
Minced Meat
Soy Sauce
Pepper Sugar                                      
Corn Flour
Sesame Oil

1)         Wash & rinse it.  Chop it.
2)         Combine all the ingredients and marinade for ½ hour.
3)         Steam for ½ hour and serve it hot.

豆腐蒸腊肠 Steamed Bean Curd With Chinese Sausage



Ingredients:
2 packs White Bean  Curd
2 piece Chinese Sausage,Chinese

For the sauce:
2 tablespoons Light Soy Sauce
2 tablespoons Chinese Rice Wine
1 tablespoon Sesame oil

Garnish:
Scallion (I did not put)

Method:
1)  Arrange the sliced bean curd on a plate and arrange Chinese Chinese sausage on top
2)  Steam for 15 minutes.
3)  In a pot, boil together all ingredients for the sauce.
4)  Pour sauce over and garnish with scallion.
5)  Serve while hot.

通心粉,罗勒酱和松子 Macaroni In Pesto Sauce & Pine Nut



Ingredients:

    8 ounces     Cooked and drained Macaroni
1 1/4 cup        Basil Pesto, homemade or store-bought
  1/2 pkt        Cherry Tomatoes (as many as you want)
  1/2 tbsp       Lemon Zest – optional
2 1/2 tbsp       Olive Oil
    1 tbsp       Extra Virgin Olive Oil
  3 cloves       Garlic, peeled and sliced
   1 cup          Pine Nuts, lightly toasted in a skillet until golden and cooled
salt to taste

For Garnish:

A few fresh basil leaves , optional


Method:

1)  In a large pan, add garlic slices to sautee it then add in cherry tomatoes.
2)  Cook for a couple of minutes at high heat until they start to soften and pop and also get charred and small blisters on the skin.
3)  Add the drained pasta and toss well for the oil and veggies to combine the pasta.
4)  Add the pesto and toss carefully.
5)  If the pasta feels too dry, add the reserved pasta water.
6)  Switch off the heat add in salt, pine nuts, zest.
7)  Mix in some extra virgin olive oil.
8)  Garnish with fresh basil and serve warm.

金枪鱼通心粉沙拉 Tuna Macaroni Salad



Ingredients:

  1 can       Tuna in water, drained and flaked
  8 ounces  Cooked and drained Macaroni
  2 tbsp      Mayonnaise
  1 tbsp      Lemon Juice
1/2 no        Large Green Bell Pepper, chopped
1/2 no        Large Yellow Bell Pepper, chopped
1/2 no        Large Red Bell Pepper, chopped
1/2 cup      Chopped Onion
  2 tbsp      Extra Virgin Olive Oil
salt and Pepper, to taste

Method:

1)  Combine the drained tuna and macaroni.
2)  Stir in Extra Virgin Olive Oil, mayonnaise, lemon juice, green and red bell pepper, and onion.
3)  Add salt and pepper, to taste.
4)  Cover and refrigerate until ready to serve.

黄酒鸡 Chicken In Rice Wine

食谱来自Violet Lim
材料
玉米一罐(Creamy)
Custard powder 150g
白糖100 g
椰浆200ml ( 我用有机豆粉)
水800ml
班兰叶几片

做法
1) 椰浆,糖,Custard Powder 和玉米拌均,备用。
2) 班兰叶和水煮滚后,捞起班兰叶,加入做法1 ,转小火,不停的搅拌约 15分钟。
3) 倒入模里,待冷后,放入冰箱3小时,就可以脱模和切片。
温馨小提示~ 待冷时,不可吹到风扇,也别在有风的地方的待冷,否则会出现裂痕,就像地震一样哦
