Banana & Raisin Bread














Ingredients A: (Sifted)

180 g               Plain Flour
    1 tsp            Baking Powder
    1 tsp            Bicarbonate of Soda
1/2  tsp            Salt
1/2  tsp            Cinnamon Powder

Ingredients B:

180 g               Castor Sugar
120 ml             Corn Oil
    2 nos           Egg (lightly beaten)
    1 tsp            Vanilla Essence
  60 g               Raisin (soaked with 1/2 cup of water for 10 minutes & drained it)
120 g               Ripe Banana (mashed it)

1.  Sift ingredients A into a big mixing bowl.  Make a hole in the centre of flour.  Add ingredients B & stir in one direction till thoroughly mixed.

2.  Grease a 12 cm by 22 cm loaf tin.  Pour in the cake mixture.

3.  Bake in a pre-heated oven at 180 C(350 F) for about 30 minutes.
