客家炸肉 Hakka Braised Pork With Black Fungus












Ingredients A:
Pork 五花肉
Five Spice Powder 五香粉
Fermented Bean Curd 南乳
Fish Sauce鱼露
1 no Egg 蛋
Oyster Sauce 蚝油
Pepper 胡椒粉
Cornflour 蜀粉
Rice Wine料理酒

1) Marinade all the ingredients A overnight.
2) Deep-Fry the pork. Set aside.  (Save the marination sauce)

Ingredients B:
Whole Garlic
Mushroom
Black Fungus
Oyster Sauce
Water
Black Soy Sauce

3) Heat oil sautee the garlic pieces till golden brown, then add in the balance of ingredients B including the balance marination sauce & boil it for 15 minutes. Adjust the taste according to your own before put in the deep-fried pork.

4) Place the deep-fried pork into the pot and cook till tender, then only stir it.  This is prevent the burnt of the pork.
