冰糖元蹄Stewed Pork Trotter In Rock Sugar










Ingredients :
Pork Trotter :
1)  Wash the pork trotter, boil with water, spring onion, sliced ginger & Shaoxing Wine for 10 mins.
2)  Remove and immediately rinse in running water.
3)  Drain it
Spring onion
Sliced Ginger
Bay Leaves
Cinnamon Stick
Star Anise
Dry Longan
Rock Sugar
Shaoxing Wine
Light Soy Sauce
Dark Soy Sauce
Method:
1)  Place all the above ingredients into a pressure cooker.
2)  Cover the lid and bring to boil till pressure cooker needle is uplift then start count the cooking time for 10 mins.
3)   Off fire and let the pressure out.
4)  Separate the sauce and thicken with cornflour.
5)  Pour the sauce over the pork trotter and serve with rice.

咸菜猪肚汤Pickle Vegetable Pork Stomach Soup








1个             猪肚猪
1只      鸡
1个     红萝卜
2条      猪肠
5片      姜片
3粒      番茄

1)猪肚用盐反复搓洗五到六次,然后用清水洗净,飞水晾干,再用少许油两边煎一下再切片。
2)猪肠用整两粒小蒜头把猪肠内去干净,再用盐反复搓洗,然后用清水洗净。
3) 鸡切大块,飞水晾干待用。
4)  酸菜用清水浸直咸味去除,撕开,洗干净晾干水待用。
5) 红萝卜去皮,切大块,洗干净晾干水待用。
6) 番茄洗干净切大块。
7)  汤煲加入水煮开,下猪肚、鸡块、酸菜、红萝卜、姜片,改慢火煲半小时,取出鸡块,加入猪肠再煲一个半小时。
8)  加入番茄,再煲5分钟。
9) 捞起猪肠,切小块。
10) 加盐适量,再加胡椒粉少许。

香蕉蛋糕 Banana Cake

Ingredients:
1 1/2 cups Plain Flour
250 g 4 Ripe Bananas
1/3 cup Unsalted Butter, melted
3/4 cup Sugar, white or brown (if you like darker color, use brown)
1 no Egg, whisked
1 tsp Vanilla Extract
1 tsp Baking Soda
1/8 tsp Salt
1/4 cup Milk (or 1/2 cup, depending on the thickness of the batter)
Method:
Preheat oven to 175 C (350 F).
1) Mashed the ripe bananas in a large bowl with a spoon or process in a food processor.
2) Use a wooden spoon or spatula to combine melted butter with the mashed bananas.
3) Stir in sugar, whisked egg and vanilla.
4) Add 1/4 cup of the milk first, then combine well. If the batter is too thick, add more and adjust the amount as you go.
5) Sprinkle the baking soda and salt in the mixture.
6) Stir in sifted flour, one third at a time.
7) No need to stir too hard, just fold and incorporate all ingredients thoroughly.
8) Transfer mixture into a greased 4 x 8 inch baking pan.
9) Bake for about 1 hour.

Chai Boey/Chap Chai

 





   1 kg                  Roasted Pork
1/2 no                 Roasted Duck
300 g                   Fresh Prawn
   2 kg                  Mustard Plant (大芥菜) - wash & cut in big pieces
   3 nos                Carrot - Peel, cut in big pieces
   1 in                   Sliced Ginger
    5 pcs               Dried Chili
    3 nos               Chili Padi
 1/2 pc                 Palm Sugar
  10 pcs               Tamarind Skin
500 ml                Water
Salt & Tomato Paste to taste
Method:
1.  Place all the above ingredients in a big non-stick pot and bring to boil.
2.  Slow down the frame to simmer for 45 minutes to 1 hour.
3.  Stir occasionally for better cooking.
4.  Add salt & tomato paste to taste (Add tamarind juice if not enough sour).
5.  Serve warm.
