肉末炒豆腐 Stir-Fried Minced Meat With Bean Curd
Ingredients:
3 nos Fried Bean Curd
100 g Minced Meat - marinade with soy sauce, pepper, sesame oil & corn flour
1 tbsp Chopped Garlic
1 stalk Chopped Scallion
1/2 bowl Water
Oil
To Taste:
Soy Sauce
Pepper
To Thicken The Sauce:
Corn Flour
Water
Method:
1) Heat oil sautee the chopped garlic till fragrant.
2) Add in marinated minced meat continue cook.
3) Put in water to bring to boil.
4) Add in fried bean curd to braise together.
5) Thicken the gravy with mixture of cornflour & water.
6) Garnish with chopped scallion.
7) Serve in hot.

上海菜饭 Shanghai Vegetable Rice
大米2杯
火腿
香肠
瘦碎
胡萝卜
冬菇
雪里红
蒜头碎
薯粉
黄酒
生抽
盐
做法
1.全部材料切丁,瘦肉加薯粉、黄酒、生抽抓捏。
2.锅里放油,先将肉丁和蒜头碎炒香变色取出,再煸香火腿和香肠,加入胡萝卜丁和冬菇丁翻炒,最后加入雪里红。
3.洗好米放入电饭煲,加入刚炒的所有菜,放刚没过米的水,加入盐,按开关。
4.滚开后再加入雪里红,拌匀,再盖上焖至开关跳起,就按平常焖饭的程序即可。
老黄瓜猪尾骨汤 Old Cucumber and Pig Coccyx Soup
Ingredients :
300 g Pig Coccyx - Wash, parboil it & rinse it
600 g Old Cucumber - Peeled, cut in pieces
5 nos Dried Oyster or Dried Scallop (I did not put)
10 nos Red Dates
3 liter Water
Bring to boil water, then add in all the above ingredients.
Boil in small frame for 3 to 4 hours.
Taste it with salt.
香蕉核桃蛋糕 Banana Walnut Cake
Ingredients A:
6 no Egg - Big (鸡蛋 - 大)
150 g Brown Sugar (糖)
2 tsp Butter (牛油)
Ingredients B:
300 g Mashed Banana (香蕉成泥)
Ingredients C:
250 g All Purpose Flour (普通面粉)
15 g Corn Flour (玉米粉)
20 g Milk Powder (奶粉)
1/4 tsp Baking Soda (梳打粉)
1/2 tsp Baking Powder (发粉)
1/8 tsp Salt (盐)
Ingredients D:
200 g Grapeseed Oil (葡萄子油)
Ingredients E:
150 g Roasted Chopped Walnut (碎核桃 - 烤香)
(I replaced with hazelnut powder)
Method:
1) Cream the ingredients until fluffy and light.
先将A打至松发。
2) Add in ingredients B continue to beat till fluffy and light too.
倒入B打至均匀及松发。
3) Stir in ingredients C till all well mixed.
加入C搅拌均匀。
4) Gently mix-in ingredients D by hand uniform.
加入D轻轻用手拌均匀。
5) Add in ingredients E continue to mix through all ingredients.
加入E用手拌均匀。
6) Pour all ingredients into a prepared 9" square tin.
倒入9吋烤模中。
7) Baked in preheat oven at 160 C for 50 - 60 minutes or till golden brown.
用160度之火度烤 50 - 60分钟至熟及金黄色。
9) Baked out of the baking to the desktop to knock a few, out of hot air.
烤好后取出烤模往桌面敲几下,敲出热空气。
10) Put the cake to be cold to flip out.
再把蛋糕倒扣出来待冷即可。
娘惹烤木薯糕 Baked Nonya Cassava Cake
Ingredients:
800 g Grated Cassava (磨碎木薯)
150 g Brown Sugar (糖)
200 ml Thick Coconut Milk (浓椰浆)
2 no Whole Egg, Big (蛋-大)
75 g Melted Butter (溶化牛油)
1/2 tsp Salt(盐)
1/2 tsp Vanilla Essence (云拉香精)
1 pc Banana Leaf (香蕉叶 - 铺烘盘用)
(I don't have banana leaf so replace with wax paper)
Method:
1) Boiled banana leaf & place in a 22cm square cake tin.
将已煮软的香蕉叶铺在一个22公分圆或方形烘盘上。
2) Well mix the above ingredients & pour into the prepared cake tin.
将全部材料充分搅拌均匀,倒入烘盘中。
3) Place into the pre-heat oven & bake at 180C for 40 to 50 minutes or till golden brown in color.
放入已烘热的烤箱内,用180度的火度烘约45~50分钟至熟及金黄色。
4) Take out from oven to cool down before cut & serve.
取出,待冷后才切块享用。

清炒芹菜,豆腐&蘑菇 Stir-Fry Celery, Fried Bean Curd & Mushroom
Ingredients:
5 pc Celery - Cut in small pieces
1/4 pc Carrot - Cut in slices
2 pc Fried Bean Curd - Cut in Strip
1 pkt Fresh Mushroom
3 cloves Garlic - Minced it
2 tbsp Cooking oil
Seasoning
Salt and white pepper powder to taste
Method
1) Heat oil in wok and saute garlic till fragrant or till garlic begin to brown.
2) Add Strip fried bean curd stir fry briskly for about 30 seconds.
3) Add celery & carrot continuous to stir fry follow by fresh mushroom.
4) Once the above ingredients fragrant, adding salt and pepper to taste.
